My family knows these as snowballs, but you might be more familiar with the name Mexican Wedding Cookies. Doesn’t matter what you call them. They are amazaballs!
I imagine other cultures have something similar and for good reason. They are my favorite family cookie.

Ingredients
- 1 C butter softened
- 2 teaspoons vanilla
- 6 tablespoons confectioner’s sugar + extra to roll
- 2 1/4 C flour
- 1/2 C chopped/ground walnuts
- 1/4 teaspoon salt
Tips
I like the walnuts chopped up pretty fine. Not quite powder, but close to it. A food processor makes this a snap.
Keep your balls small because these puff up while baking. They are much better when small.
I like to use 2 bowls of powdered sugar for rolling.
Directions
Preheat your oven to 350 degrees.
Combine the butter and vanilla.
Combine all the dry ingredients, except the walnuts.
Spoon the dry mixture into the butter mixture while beating until well combined.
Then stir in the walnuts.
Roll into 3/4 to 1 inch balls and place about an inch apart on baking trays.
Bake until the bottoms turn slightly brown.
Transfer to cooling rack and let them cool slightly. They need to be cool enough to not melt the powdered sugar but warm enough that it sticks to it.
Roll in the powdered sugar once. Then wait and roll again before storing.
